Some days are busy. Yesterday was like that. Sharing about my trip and speaking engagements in Poland with the United Methodist Women. Meetings to plan the Tri Lakes Center for Independent Living fundraising dinner. And still had to do the daily tasks of my job for Global Regional Asperger Syndrome Partnership, work on my weekly column, etc.
So dinner was thrown together:
I had a couple sweet potatoes that were still there from the fall that i wanted to use up. I took 1/4 lb. of sausage from the freezer. I fried the sausage, rendering the fat. Added onion and the sweet potatoes, and sprinkled with salt. It wasn’t quite enough, so i added a couple white potatoes, some stems of Swiss chard from the freezer, a couple minced garlic cloves and an apple. Finished it off with spices – a dash of cinnamon, turmeric, paprika. When all the veggies had softened up, i finished it with a sprinkle of Cheddar cheese. Made a quick tossed salad while the veggies were softening in the skillet, and we ate. It was quite tasty for having been put together so quickly.
