Here are some photos of what I’ve been cooking this week.
We had purchased this squash at the store a while ago, when our stock in the freezer was down and our garden wasn’t yet producing. I cooked pink beans and sauteed onions, apples, celery, mixed it all together, added a little cheese to hold it together and – voila!
We have lots of snow peas in the garden now and i’ve been cooking with them. Fresh from the garden, they’re so delicious! We pick them right before cooking them.
This dish can be a salad (if chilled) or just a main dish eaten warm or at room temperature. I cooked barley, sauteed carrots, onions and mushrooms, added peas, and seasoned it with a little olive oil and lemon, with a little mint scattered in. The only change – i’d use half the barley next time, for this amount of veggies.
Yesterday, I made this stir-fry with snow peas, pac choi and side pork. We ate it with potatoes because we’d had grain (barley) the day before.
Not sure what today’s dinner will be yet… we’re off to the farmers’ market to see what we can find!
It’ll have to be quick & easy as it’s a beautiful summer day and we plan to get out for a paddle!
