So… I’m trying to get back to a more regular blog post schedule. Here is what we had for dinner tonight – it is a frequent easy meal around our house.
This recipe came to us from Mom’s friend and work colleague at the Cell Center, Donna – who was British. We make it so often, i thought for sure it is in my book, Garden Gourmet: Fresh & Fabulous Meals from your Garden, CSA or Farmers’ Market – but somehow, i failed to include it.
There are only 5 ingredients (four if you don’t count the salt):
1 lb. fresh spinach (or equal amount frozen)
3 large eggs
1 cup cottage cheese
1/2 cup sharp Cheddar cheese
1/4 teaspoon salt
You simply steam the spinach until just wilted (use a timer to keep you on track so you don’t let it cook too long), beat the eggs, beat the other ingredients, cool the spinach slightly so you can chop it, stir everything together, shove it in the oven at 375F and bake until it is set, about 40 minutes… in the meantime, prepare potatoes and a salad.
