Main Course: Lettuce Part 2 – Lettuce Quiche

So today, it was cool enough to turn on the oven. I made this quiche with lettuce, pac choi and ham.

For the potato nest: Preheat oven to 400 degrees. shred 2 potatoes. Butter pie plate. Arrange potatoes in plate. Bake about 15 minutes. Remove from oven and proceed with the rest of the quiche.

Ingredients:

1 or 2 teaspoons butter

1 onion (Peel, dice)

1/4 teaspoon salt

1 apple (cored, peeled, chopped)

3 – 4 cups greens (pac choi and / or lettuce; i used some of each).

3 eggs

1/2 teaspoon salt

1/4 cup milk

1/2 cup sharp cheddar cheese

1/2 cup diced cooked ham

Directions:

Melt butter in large skillet over medium heat. Add diced onion. Cover and cook 3 – 4 minutes. Add diced, peeled apple. Cover and cook 5 minutes more.

Wash the greens and chop coarsely. Stir in to skillet. Cover and continue cooking until wilted.

Beat eggs with milk and salt. Set aside.

Remove potato nest from oven. Lower temperature to 350 degrees.

Spread contents of skillet on top of the potatoes. Sprinkle with shredded Cheddar cheese. Pour egg mixture over. Sprinkle ham on top.

Return to oven and bake until eggs are set, 35 – 45 minutes.

Serve with a salad for lunch or supper.
