Green Bean Bake
This recipe is from my new book, Garden Gourmet.
3-4 cups green beans (about a pound or a bit less)
1 yellow onion
1 /2 tsp salt
1/2 cup bread crumbs
1 cup grated sharp Cheddar cheese
2 Tablespoons additional cheese
2 Tablespoons additional bread crumbs
Preheat oven to 350 degrees. Butter one large casserole.
Prepare beans by rinsing under cool water, snapping off the ends and cutting into one or two inch pieces. Peel and dice the onion.
Beat eggs with salt; beat in milk. Combine beans, onion and egg mixture in casserole; stir in bread crumbs and grated cheese. Combine topping ingredients and sprinkle on top; bake 35 – 40 minutes, or until done.
