Tonight’s Dinner: Cabbage Pie. If you omit the bacon, it’s a great vegetarian main dish. We had it just with a bowl of salad.
Start by making a potato nest crust:
While crust bakes, make the filling. Cook bacon till crisp (if you’re not making it vegetarian); remove to drain on paper towels. Then saute onion and cabbage in the bacon drippings, like this: Now put the cabbage in the crust, top with hard cooked eggs, sprinkle with the reserved bacon and cheese, and bake.
Serve with a side salad.
